While some foods can use a sauce, there are some that are good just by themselves.

Take something like salmon.?? I find that the trick about making salmon is not covering up the flavor.?? The other thing is not to cook it above a medium heat in the skillet.?? Anything above that just dries it out.?? I like a few spices and herbs and some olive oil in the skillet, but that really all that it needs. And for more me, it really works if it is wild salmon.?? The flavor is much better. And, of course, it has to be fresh, when fish is not fresh, there is nothing that you do with it.

On our San Francisco Food Tour of North Beach\Little and Chinatown, that freshness factor seems to be important to a lot of people.  There is something about fresh food, whether it is fish, vegetables, chicken, or any other food, that is a major factor in how it tastes.  If something is not fresh, about the only thing that one can do it to try to cover it up.  It is probably the reason that some people on our San Francisco Food Tours are so fanatical that the fresh food that is also local.  The longer that is takes from it??s source the less fresh that a food is going to be.  And in the final analysis, it what determines whether you can bring out the favor of the food or you have to cover it up.  It??s like salmon, when it??s fresh, it just not need much.  When it??s not, there just is not much that you can do with it.
