Whether it is on our San Francisco Food Tour of North Beach\Little Italy or Chinatown, everyone seems to be a fan of rice

In Chinatown, it??s rice noodles. In North Beach\Little Italy it??s risotto. Admittedly, I??m a huge fan of risotto. Once you get the basic technique down, there is not much that you cannot make into risotto. For me, I just saut? some onions and garlic until they are translucent, add the rice, saut? it for about a minute or two, add some wine, cook that until it evaporates. I like adding whatever meats or vegetables at the point. The only thing is that they don??t cook much beyond that point, so I like cooking them before I put them in. I then just slow adding liquid, such as stock until it??s absorbed. I like adding some herbs and cheese at the end. I think that for me, the challenge is to add enough cheese to flavor the risotto, but not so much that it covers it everything else. In Chinatown, the rice noodles are what makes everything really good. Unlike risotto, I??ve never been successful making rice noodles. I wish I could, I??ve watched people make them, however I??ve never been able to get the technique down. The result is that I am incredibly impressed when I enjoy them. On our San Francisco Food Tours, we get to try so many different foods every day. Being that I like cooking, I frequently go home and try to make them myself. Sometimes it works, other times I??m glad other make them better than I do.
