This time of year, many of us in San Francisco are just waiting for Dungeness Crab.

The season has been delayed this year by about a month. The first crab of the season is always the sweetest.?? It??s so good that many just eat them by themselves.

On our San Francisco Food Tour of North Beach\Little Italy and Chinatown, it??s that thing that about eating seasonally.  It??s when the food is the sweetest.  I might be able to get Dungeness Crab when it??s out of season, however it??s usually been frozen, and it doesn??t have much flavor.  At that point, all one can do is cover it up with lots of butter or some sauce.

On our San Francisco Food Tours, covering something up is the last that we want to do for fresh food.  More likely, we like the favor of the food to speak for themselves.  For example, a good tomato does not need much done it; when it??s fresh the flavor of the tomato is great as it is.  It??s sort of like a great apple it, it does not need much done it.  It??s the crisp and sweet flavor that make an apple the perfect flavor.  Just like fresh Dungeness Crab, which is sweet when it??s in season and when it??s not in season, it does not have much flavor at all.
