There is something about a great cappuccino that just makes the day start off better.

It??s got to have all of the right elements. The perfect shot of expresso, with the foam exactly right. I like it when the foam almost stands up itself. And the temperature should be warm, but not hot. All of that can be lost if it??s not in the right cup. The cup needs to wide enough that you can experience the foam, but not so wide that you lose the bouquet of the cappuccino. If all of that sounds overly particular about something like a cappuccino, it??s that on our San Francisco Food Tour of North Beach\Little Italy and Chinatown, we get see how a food artisan takes that much care into the ingredients and to how it is prepared. It also shows how foods needs to be balanced. Where each ingredient affects the other ingredients. Similar to the expresso in cappuccino, it needs to strong enough to hold up to the foam but not overwhelm the food. Just like spices should enhance the food not overwhelm them. On our San Francisco Food Tours, we see how local food artisans take that kind of care with the foods that they make. Making sure that each ingredient is fresh and compliments the other ingredients. It??s what make for great food and a great cappuccino.
