I can??t recall which month brings spring flowers, according to the old saying, however we??re starting to see them on our San Francisco Food Tour of North Beach\Little Italy and Chinatown. We got more rain than usual, and abundance of flowers has been really spectacular. Along with flowers, we??re starting to see some of my favorite mushrooms, Golden Chanterelles. Hopefully, we??ll see a large crop of mushroom this year. There are some kinds like button and cremini mushrooms that farmers can grow. Others, you need to go out and search for. Not being a mushroom expert, I??ll leave the mushroom picking to the experts. While the right mushrooms are delicious, the wrong ones can look very similar to the right ones and can make one sick or can even be fatal. For most of us, mushroom picking should be left to the experts. On our San Francisco Food Tours, we??re starting to see a lot of dishes with the right mushrooms. For example, porcini mushrooms are turning all of the place. While many people like the dried porcini mushrooms, I??m a huge fan of the fresh ones when I can get them. The dried ones tend to end up in sauces. The fresh ones are great in sauces, however the fresh are great in soups and stews, as well as sauces. When I see my favorite mushrooms, Chanterelles, I make them into everything from sauces, salads, quiches, and more. They are great in a frittata. So, whatever your favorite mushroom, just sit back on enjoy them. Just leave the picking to the experts.
