On our San Francisco Food Tours, we can tell when salmon comes into season, it starts showing up in things like Panini sandwiches, salads with salmon, and of course, just broiled or baked. I like to serve it with either some lemon wedges, or a fresh citrus or fruit salsa, such Mango salsa. It just adds a great fresh flavor to it without covering it up. The basic rule for buying seafood is that if you can smell anything, don??t buy it. I awls ask when it came in. If the answer is anything other than today, don??t buy it. If it is a whole fish, the gills should be bright. I frequently ask to smell the fish. Most markets usually won??t let you get very close, however even from a short distance, you should not smell anything. If fish is not fresh, there is very little that you can do about that. Once you get it home, the trick is to cook it just enough that is done, not so much that it dries out. As soon as it starts to easily flake, it??s done.
The interesting part about eating seasonally is that one something is fresh; you don??t need to do much to it. When it??s not fresh, there is not much that you can do fix it. That could the reason that we eat the way we do here. Or, it could be that it tastes good.
