On our San Francisco Food Tour of North Beach\Little Italy and Chinatown, it??s amazing how a few simple ingredients can create an amazing dish. At one of our stops, they started making a dish where they take a Parmesan wheel, then flamb? some alcohol inside the parmesan wheel and cook the alcohol until all of the flames are gone. They then scrape out the melted parmesan and mix in fresh pasta and stir the pasta with the parmesan until it forms a smooth consistency. Next, they take saut?ed mushrooms or pancetta or a number of different additions and mix it in with parmesan and the pasta. They finish it off with some fresh rosemary. The result is an amazing dish. The parmesan with the pasta is incredibly delicious.

They start with the best ingredients and then try to do things that bring out the flavor of the food, not cover up the flavor of the food. It is the same way when I am cooking at home. I find that the best dishes are the ones where I go for fresh foods and then try to do as little as I can and try avoid covering them up. If the pasta is fresh, it does not need much. If the herbs are fresh, the flavor of the herbs is the only thing that I want to bring out. The good news is the stops of our tour think the same thing.
