Whether it??s garlic and green beans, butternut squash and walnuts, or brussels sprouts and tomatoes, it??s the freshest of the ingredients that makes all of the difference. When brussels sprouts are fresh and you roast them , the sugar caramelizes. A couple days later, the natural sugar inside the brussels sprouts turns to starch and they can have a really flat taste. The same thing is true with tomatoes, when they are first picked, they are really sweet and tangy . A couple days later, they lose all of that flavor. Roast the two together and it turns into a delicious combination. The same thing happens with garlic and green beans. The sugar is the garlic caramelizes along with the freshest of the green beans and the two really complement each other. It??s the same thing over and over.
