On our San Francisco Food Tour of North Beach\Little Italy, it??s always interesting how a minor ingredient can make a major difference in the outcome of a dish. For example, take something like Chicken Marsala, being one of my favorite dinners, I make very frequently. For years, I used a ???regular?? marsala and didn??t give it much thought. One of our friends in North Beach, Coit Liquors, has a really good wine selection and had a dry marsala that I decided to use. It made an incredible difference in the dish. The Chicken Marsala was a little less sweet and more of the marsala flavor actually came through. Adding some fresh oregano and fresh parsley really made for a great dinner. For example, using fresh ricotta that someone just made can make the difference between a good cannoli and a great cannoli. Or, using fresh herbs rather than dried herbs in a dish can really bring out the flavor. The main difference in using the two is when one adds them. In general, it??s better to add fresh herbs at the end of making the dish, otherwise the flavor of the herbs can get washed away as the dish is cooked. Those simple small ingredients can all the difference. And fortunately for us, people in North Beach know that. It makes for delicious experience.
