On our San Francisco Food Tour of North Beach\Little Italy, our stops use the best ingredients to make pasta, from semolina flour to fresh eggs, plus fresh water and salt.    For many of us, who are home right now, we don??t always have things like semolina flour.  And given that we really need to stay home right now, it??s not a good idea to go out to get things like semolina flour. The good news is that when I??m making something like pasta, almost any kind of flour will do.  If you can??t find a recipe for the type of flour that you don??t have, start with about three cups of sifted flour.  Sifting making the flour a little lighter, and it help it to combine more evenly.  For example, three and half cups of all-purpose flour usually needs about 4 eggs, a tablespoon of water and about ?_ teaspoon of salt.  If you??re using another kind of flour, start with less flour and eggs and water and salt and start adding flour, eggs, water, and salt, as you knead the dough.  If you have a stand mixer, it??s ideal.  If you don??t have a stand mixture, use a well-floured counter or cutting board until you a crumbly mixture that you can knead it into a ball. Just do a little a time, you can add more flour, eggs, water, and salt.  If it gets too wet, just add more flour,

While the food is great in our San Francisco Food Tours, our stops usually have access to the ideal ingredients.  One way to substitute ingredients is to think about each ingredient are intended to accomplish.  For example, eggs are frequently used to hold things together, if I??m out of them, sometimes I can use butter or even oil.  It??s more important to stay home right now than to go out for an ideal ingredient.  If I look around my kitchen, I can usually find something to substitute.
