Making my own customized dessert

While we??re at home from our San Francisco Food Tour of North Beach\Little Italy and Chinatown, I try to eat heathy, however a nice dessert now and then is good for my mental health.  One of favorite desserts in Panna Cotta. It one of those desserts that I customize on a lot of different ways.   However, I??m even if I??m planning to customize my Panna Cotta, I always start off with about a cup of milk in a saucepan.  After sprinkling some plain gelatin on the milk, I just let it sit for about ten minutes before I heat it up a little bit until warm, but not so much that boils, so the gelation will dissolve well.  I like to stir it constantly at this point.  If you like a lemon flavor, it a good time to add some lemon zest.  Next, slowly stir in about three cups of heavy cream, stirring constantly.  Add about four tablespoons sugar and a pinch of salt and let it all dissolve.  Then just cool down everything in a water bath, while stirring until starts to thicken. You can then add whatever flavor or that you like, lemon, chocolate, pomegranate, etc.  Just make that it is in a liquid form. Then just pour it into serving containers and let it cool down in the refrigerator.
