Leftovers can make a great dinner

Eggs are one of those ingredients that seems to permeate most cuisines.  Given how versatile that they are, that is probably no surprise.  On our San Francisco Food Tour of North Beach\Little Italy and Chinatown, we often see it show up in both neighborhoods.    At home, I end using them very frequently.  It??s a great way to make a quick meal.  In addition to omelets, they are a great way to use up leftovers in things like a frittata.  A frittata is really just an open face omelet.  In simplest terms, I can just saut? what ingredients that I like in a skillet, such as onions, asparagus, squash, broccoli, sausage, or whatever I have left around, then add little cheese, if I like.  I just pour enough beaten egg to cover everything, and then put the skillet in the oven until at about 350 degrees until it??s golden brown on the top.  If you don??t have an oven safe skillet, just pour everything into a casserole dish.  It usually takes about 20-30 minutes, however, keep an eye on everything, so it does not burn.

On our San Francisco Food Tours, a lot of the dishes started on using leftovers.  For example, one of my favorite dishes, chicken with red wine sauce, is basically chicken cooked with leftover like green peppers and mushrooms and then cooked in red wine.  It??s like making a frittata, a great way to use up leftovers and using something to bring out all of the flavors.  It may the reason that when I see leftovers, I see it as my way for a great dinner.
