It??s those little things that makes a dish go from okay to really great.

When I??m in the kitchen cooking, it??s always interesting how certain spices or herbs can add a special touch in unexpected foods.  Take something like cinnamon, most of the time I us it in deserts like deserts with apples or other fruits, however added to something like tomato sauce, it adds a great addition to other foods, such as chicken or pasta.  It??s those little things that makes a dish go from okay to really great.  On our San Francisco Food Tour of North Beach\Little Italy and Chinatown, many of our stops are the same way.  For example, one of our stops got some fresh pistachios and tried adding them to some ricotta cheese and then into a pastry dough, along with some cinnamon, all spice, and nutmeg. They just gave it out without charging it, to see what everyone??s reaction.  It remarkedly good.  They many end up selling it, however they haven??t decided yet.

On our San Francisco Food Tours, it??s that kind of experimentation that can make for some really great new dishes.  Someone in the kitchen tries to experiment.  Sometimes it works, sometimes it doesn??t., They will frequently test it out with family or friends.  If you??re part of that group, you can end trying some really tasty things.   The good news is only that the successes ever get sold. The result is that I get to try some great new ideas.  And then I can try using those ideas at home.  It??s what makes cooking such a fun a creative thing.  The chance to experiment, have fun, and enjoy the successes.
