Even though that it is more New Orleans than San Francisco, real gumbo is really delicious. On our San Francisco Food Tour of North Beach\Little Italy, one of stops made some for us to try. And although I am hardly a gumbo expert, it was really good. For a long time, I tried making gumbo, however the hardest part is getting the roux right. From what I understand traditional gumbo uses a roux made with oil and flour, as opposed to butter and flour. It??s also cooked a lot longer than the typical roux. The roux in the gumbo is used more flavoring than just as a thickener in a white or traditional roux. The challenge is that is getting it dark and brown without having it go to black and being burnt. The best way to do that is to keep a really close eye on the roux, to get that nice brown color, without going to black and being burnt. If the roux is burnt, about the only thing that you can do is throw it out and try again. As the roux is used for flavoring, if you use a burnt roux, the gumbo is going to taste burnt. Sometimes, the person making the new food is someone from here who is trying out a new idea or sometimes it is someone who just moved here and has brought some new ideas with them. Especially when someone has moved here from another part of the world, they usually have a take on food that is particularly delicious and exciting. They usually have ideas that we would never have thought of, however the flavor is fantastic. All in all, it makes for some great meals.
